What’s (not) Cooking – Salad Special – (1/August/2021)

Lunch menu:

Chickpeas, tuna and shallots salad with olive oil and lemon dressing
Baby spinach, Greek feta and roasted pumpkin seeds salad with mustard vinaigrette dressing
Summer rice salad with basmati rice, red and yellow bell peppers, cherry tomatoes and black beans
Classic summer salad – oxheart tomato, cucumbers, bell peppers, red onion with olive oil and red wine vinegar
Black beans, kidney beans, cannellini beans, corn and bocconcini mozzarella
Potato and rucola salad
Cold pasta salad with pesto, toasted almonds, parmesan and rucola

Potato and rucola salad

You will have to cook some rice, some potatoes and some pasta this week but that’s it – everything else is either raw and fresh or canned and ready to eat.
You can add a boiled egg to Tuesday, Wednesday and Saturday salads.
Add a slice of good bread that you can dip in the dressing on Thursday and send me a thank you note later.
